 |
Sastojci za čobanac:
(na bazi 12l vode za oko 15 osoba)
- 10 glavica luka (srednje veličine)
- 2 blaga začina za čobanac (sastojci su otprilike: Sol, Papar, Ljuta paprika, Slatka paprika, Vegeta itd.)
- 25 dkg mesa po osobi (na 12l vode 2.5-3 kg mesa (od viška glava ne boli) )
- 10 dkg svinjetine (bez kosti - but, plećka itd.)
- 5 dkg svinjetina (kožice, uho, nogice)
- 5 dkg junetine (bez kosti - plećka, vrat itd.)
- 5 dkg jelen / srna / divlja svinja / ovčetina (bez kosti)
- 10 dkg sitne ljute paprike (naravno može se količina smanjiti po ukusu… bez obzira što se stavlja začin za čobanac, stavlja se i ovaj sastojak)
- 1 velika žlica mljevenog papra
- 2-3 paprike feferone
- Sol (po potrebi/ukusu)
- lovorov list
- 1 dl bijelog Vina
- papar u zrnu
- 2 dl mineralne vode
- šećer
- 2dl pasirane rajčice
- 4 režnja bijelog luka

Priprema čobanca:
- Isjeckati luk na site kockice (Što sitnije to bolje - on poboljšava gustoću čobanca, znači što se bolje prodinsta i što je sitniji to će čobanac biti gušći)
- Isjeckati meso na kockice +/- (2cm x 2cm x 1cm)
- Stavimo u kotlić (lonac) luk, žlicu šećera (da luk sto prije prodistamo i da pusti vodu), 2 lovorova lista i 1dl mineralne vode i dinstamo +/-10min)
- Dodamo 5 dl vode
- Zatim stavljamo meso po tvrdoći (prvo svinjeće kožice, uho, nogice, jelen ili srna nakon 10-15 minuta divlja svinja, nakon 10-15 minuta dodajemo junetinu nakon 10-15 minuta ostatak svinjetine)
- Dinstamo uz dodavanje sto manje tople vode (znači samo hladna i naravno što manje
 ) dok se meso ne opusti
- U međuvremenu dok dinstamo meso razmutimo začin za čobanac u 1L hladne vode (Tako da bude spreman kada meso bude prodinstano)
- Kada se meso opusti (pusti vodu i dobije pomalo sivkastu boju) dodajemo toplu vodu do malo manje od pola kotlica i dodajemo razmućeni začin za čobanac i 2-3 feferone te to jos dinstamo nekih 20-30 minuta
- Nakon 20-30 min dinstanja dodajemo tople vode skoro do vrha kotlića (+/- 4 prsta manje od ruba)
- Kada čobanac prokuha dodaje se 1 dl Bijelog vina, 2dl Pasirane rajčice, 1 Veliku žlicu mljevenog papra, 10 dkg Mljevene ljute paprike
- Čobanac mješati svkih 2-3 minute i održavati da konstantno kuha (ključa) ali ne previše da se meso ne bi totalno raskuhalo
- Stavljati soli i ljute paprike po potrebi/ukusu
- Kuha se sveukupno od 2.5 do 3h
- Pred kraj kuhanja (+/- 30 minuta prije kraja) dodaje se 3-5 zrna papra, 2-3 lovorova lista i 4 reznja bijelog luka (Pojacava gustoću, suzbija žgaravicu koja nastaje zbog ljutine čobanca) sitno narezana
Napomena:
Slavonski Čobanac mora biti dosta ljut, ne smije biti mastan i mora biti malo više od srednje gust.
Ako se čobanac pravi u kotliću onda premazati kotlić s sredstvom za pranje suđa (Likvijem u HR, i naravno ne zapaljivim  ) |
